Shaping Split Loaves (Pain Fendu)

  • About

  1. When you’ve shaped the loaves, press a wooden spoon handle into the dough along the length of each loaf.

  2. Turn the loaves over onto a sheet pan so the split is now on the bottom, then reinforce the split by pressing again, now on the top, with the wooden spoon handle.

  3. Let proof until doubled in size, then bake.
