Bread is sometimes brushed with water or egg wash immediately before it goes into the oven. The water helps prevent a crust from forming prematurely on the loaf. Water can also be used to make seeds, oats, or other garnishes adhere. Unlike egg wash, water does not affect browning. Richer breads, such as brioche or challah, are usually brushed with egg wash just before they go into the oven to help create a shiny golden crust. Take care to brush gently—too vigorous a brushing can cause even slightly overproofed dough to collapse.
