Most baking is done on the middle rack of the oven. Placing a pizza stone on the bottom of your oven will help it maintain an even temperature. A convection oven is a great help in baking, as it cooks rapidly and evenly. Puff pastry does especially well in a convection oven. The recipes in this book were developed and tested using a conventional oven. If you have a convection oven, lower the temperature by 50 degrees.
