Using a bench scraper, make 3 to 5 cuts on the diagonal down the loaf (A). Then make 3 to 5 cuts in the opposite direction, crossing the first set of cuts, to make diamonds (B).
Using a bench scraper, gently flip the loaf onto a floured linen (Cโ€“D).
