These gourds come in a variety of shapes – not always resembling a bottle. All have pale green hard skins, smooth to the touch, sometimes faintly ridged. The flavor is mild and slightly cucumbery. Cook them as you would summer squashes; they can also be stuffed and baked. See also Squash.
