Although it slightly resembles a coarser version of spinach, this vegetable is actually a form of beet that is grown solely for its leaves.

Look for fresh leaves and clean, milky white stalks. Remove the stalks when washing it. The leaves, when blanched, can also be used for wrapping things, rather as you might use vine leaves. It can be shredded and added to thick vegetable soups for extra winter vitamins, or substitute it in recipes for chard. It is not available in America. (43)
