Not available in America, this bird weighs about 2 pounds and is a young broiler of about six weeks old. It is enough for two people. This small tender bird may lack flavor; after all, it has hardly had time to develop any. Consider marinating or stuffing it before roasting it, or roasting it with plenty of other flavors. I insert slivers of garlic and fresh ginger into the flesh, rub it all over with soy sauce and a little rice wine or vinegar and brush it with sesame oil. Leave it for a few hours to absorb the flavor and then roast, steam or pot roast it. Garlic, lemon, onion and sherry are also good flavors for a double poussin. Sometimes you may find two single poussins packaged together on one tray and sold as “a double poussin”.
