Zuppa pavese is a soothing soup from Italy in which boiling hot broth is poured over a raw egg in a heated bowl. Similar soups are found in Spain, Portugal, Malta and Greece and make excellent supper dishes. The Chinese egg drop soup is different in that the beaten raw egg is stirred into the hot broth which sets it in strands.
