Goats’ milk is drunk by more than half of the world’s population, but in the United States only now is it becoming more widely available. It looks like cows’ milk, has a similar composition and can be used in the same ways although it is a little stronger and tangier in taste. Used mostly by people who are allergic to cow’s milk.
