There are something like 200 “yellow fats” on the market, many designed to taste and look like butter. They are made from combinations of animal and vegetable fats, coloring, stabilizers and preservatives. Some have the same fat content as butter or margarine. Others have a large proportion of water whipped in; these contain less fat and fewer calories. See also Cooking Fats.
