Made from cows’ milk, Derby is pale with a close firm texture, and mild buttery flavor. It is usually available young when I find it lacks personality, but sometimes it is sold mature, when I find it makes an excellent dessert cheese. The more popular Sage Derby — marbled green with the juice of sage leaves – has a sharper taste. (247)
