  • About

This Greek semihard cheese is generally made with ewes’ milk, but a little is produced from cows’ milk. It has an elastic texture and a creamy, slighdy salty taste. It is used fresh or ripened for about a month, and is very popular in cooking. Rinse with water or milk. (253)
