A Dutch cheese spiced with cumin seed, made from pasteurized cows’ milk — part skimmed, part buttermilk — Leiden has a firm texture and a natural yellow rind (orange if farm-made); for export the cheese is red or yellow-waxed. It has a mild taste dominated by the cumin. (247)
