Spain’s premier cheese originated in La Mancha but is now produced all over the country. Made from ewes’ milk, it has a firm ivory-to-gold interior and a taut nuts-and-butter flavor. With age it becomes harder and drier. Manchego is sold at various stages of maturity. (247)
