An Edam-type Dutch cheese made from pasteurized cows’ milk, Mimolette is a hard bright orange cheese with a drab darkish rind, and strong appetizing flavor. A French Mimolette — very similar in looks and taste — is also produced in various parts of France, especially in Flanders. Good for grating and cooking. (247)
