One of France’s great mountain cheeses is made in Haute-Savoie from cows’ milk and is semi-soft, with a yellowish brown rind and a cream interior. Its gentle fruity flavor becomes bitter if the cheese is aged too long. It is sold in flat rounds set on thin wooden discs. (254)
