All parts of the fresh coriander plant are edible, although the fresh leaves and dried seeds are commonly used in cooking. Coriander leaves (coriander bunch) should be washed well as the leaves and stems tend to collect soil. Before washing the fresh coriander, trim off about 2 inches from the bottom root. Once washed, dry well and put the leaves onto a chopping board. Hold the bunch tightly with one hand, rolling the leaves together and making it easier to chop. Fresh coriander will store in the refrigerator for about a week in an airtight container, although freezing coriander is not something I recommend as not only do I find it loses flavour but it also wilts the leaves.
