Hand blending masala sauce

Using a stick or hand blender, some recipes ask you to blend the masala sauce. This is to give the masala sauce a smoother and fluffier texture. If a hand or stick blender is not available, then simply chop the ingredients in the curry base as finely as you can and this way the sauce will be smooth enough. However, blending the sauce does totally change the colour and texture of the gravy making it smoother and giving it a lighter orange appearance. It should only take about a minute to blend your sauce. Once blended, it can then be put back on to the heat and you can add the spices thereafter. I add the spices after blending the sauce as this is something I learnt from my mum, she says it saves the blender stick from turning yellow in colour if you blend after the spices have been added.
