Artisanal

Refers to an approach to breadmaking that embodies a craftsman’s attitude; working with raw ingredients; being at the mercy of nature; and being bound only by the acquired skill and intuition of the baker. Could be thought of as the antithesis of assembly-line baking. See What Is an Artisanal Loaf?.
