Proofing in reverse; holding an unbaked loaf at a particular size by refrigerating dough; putting the yeast to sleep by chilling it. Retarding occurs as the dough chills below 50°F., a temperature that brings the fermentation process to a virtual standstill, dough may be held for a couple of days.
