Propane or butane-fueled grills offer easy, consistent grilling. They are ideal when grilling small quantities of quick-cooking foods. To achieve the smoky flavor that charcoal fires offer, use smoking chips. Soak aromatic wood chips in water at least 30 minutes, and then place them in heavy-duty aluminum foil. Wrap foil to seal, and pierce many times with a stick or fork to allow smoke to escape into the grill. Use a lid so smoke comes into contact with food.
