Don’t rely on a clock and your memory. I’d even advise against using oven timers or cell phone alarms. You need a reliable, dedicated digital timer to accurately measure processing times. I’ve tried many, many models, and the best one I’ve found is a cheap one made by Taylor that I got at a grocery store. No frills is what you want, a simple intuitive design.
