The most humane way to kill a lobster is with a knife. Using the tip of a sharp knife, carefully cut down through the head behind the lobster’s eyes, angling the blade in the opposite direction from the body. You’ll need to apply quite a bit of force; make sure you cut all the way through.
Snap off the lobster claws and place to one side.
Bring a large pot of salted water to a rapid simmer and carefully drop the lobster body in. Cook it for 3 minutes, then remove from the water and set aside to cool.
