Jamie Montgomery makes a superb farmhouse Cheddar with immense skill, using unpasteurized cow’s milk and traditional rennet, and every part of the cheesemaking process is overseen by him. What I love about this cheese is its fruity complexity and elegance – a combination that makes the perfect cheese sandwich! The grassy aroma of the cheese is offset by its mellow, rich taste that lingers gently on the tongue. The wines of Bordeaux are an obvious partner with their austere first impression, building up to a full-bodied flinty taste. Bordeaux and Somerset have comparable regional patterns.
