Todd Trethowan, whose family moved to Wales from Sussex, first got the cheesemaking bug when he worked on Dougal Campbell’s farm (see Lincolnshire Poacher) during his vacations from university. After graduating, he decided to learn more about cheese and spent time with Chris Duckett in Somerset, whose recipe for Caerphilly he has utilized, including the type of starter. It’s not so strange that Caerphilly is made in Somerset: the cheese was first made near the mining communities of South Wales but due to its popularity over time it crossed over the Bristol Channel into Avon and Somerset.
