This French version of a classic Dutch cheese grew in popularity when General Charles de Gaulle mentioned that Mimolette was his favourite cheese, a fact that was subsequently quoted in the formal government publication Journal Officiel in 1966. Following this statement both the French and the Dutch claimed that it was their version of the cheese he was referring to!
It is an interesting cheese due to the fact that it has a kind of double life – when young its softer texture makes it a perfect breakfast cheese. But the more aged or super-aged versions are often chosen by wine and cheese experts as a good match for fine wines, since its waxy yet crisp texture lends itself to wines with age and dry tannins, and even to dry sherry. Tasting the matured cheese with a wine, giving a mouth-puckering dry edge and an austere taste, quite magically opens up the fruit flavours in the wine.
