What makes Salers d’Estive and Cantal Laguiole cheeses special is not only the cow’s milk from Laguiole and Salers breeds, but also the terrain – the plateau of Aubrac. The breed of cow for the Laguiole is the ancient Laguiole-Aubrac, a small, sturdy cow with a pale golden/fawn coat and long upwardly curved horns. This old-established breed may not give huge quantities of milk but the quality is ideal for cheese, and being native to the region they naturally thrive on the wild flora and rich pastures.
