These are tiny little pyramid ‘cocktail’ cheeses with a stick at the top for ease of handling. The fresh curds are simply drained and dropped into their moulds, and the thin natural rind forms to hug the cheese perfectly.
This is an ideal aperitif cheese, as it has a smooth yet firm texture and a thin natural rind. If allowed to mature and dry a little further the flavours become nutty and slightly tart. This cheese works very well when served with crisp, dry white wines or even Champagne.
