In the heart of the Beaufortain area and the village of Arêches, this soft washed-rind cheese of around 200 g (7 oz) is made with either cow’s or goat’s milk, although it is the goat’s milk cheese that is the rarer of the two. Production is limited to spring through autumn when the goats are allowed to roam the floral-strewn pastures. The flavours of this cheese are soft but pronounced, and a zesty white wine or a light Gamay are the most suitable wine accompaniments.
