Although under the same umbrella as the Grana Protected Consortium, the Grana Val di Non cheese has its own special mark on the rind to denote that it was made in Trentino.
Trentingrana is made in much the same way as Parmigiano Reggiano, although this cheese differs in that the aged versions do tend to have scatterings of tiny β€˜eyes’ throughout the cheese. One of the main differences between Grana Val di Non and Parmigiano Reggiano is that the cattle are allowed to graze more freely, especially those on the higher pastures of the Trentino region, and the animals are not subjected to the strict dietary feeding rules as for Parmesan.
