This is a soft ewe’s milk Pecorino with a supple texture and a taste of milky sweet hazelnuts. Weighing about 1.5 kg (3¹⁄³ lb) you will see these at the daily or weekly farmer’s markets in all shapes and sizes. Melted into a sauce, or used as an accompaniment to young spring vegetables, it heralds the lighter foods for summer eating. Thinly slice the cheese onto piping hot bruschetta, for a quick and tasty lunchtime snack. Serve it with a smooth, dry white wine.
