Similar in size to the Tartufo, the fresh curds are mixed with chopped fresh red chillies to give the mellow-tasting cheese a spicy hot sweetness. Always look for cheeses made with fresh not dried chilli as the flavours will be fresher and livelier rather than too spicy. I love using this cheese when making pizza.
