The farm is situated rather comfortably between the Sierra Nevada mountains to the east, and the California coastal range to the west, giving a perfect climate and environment for the Holstein cows to graze.

San Joaquin Gold is a 12.27 kg (27 lb) natural rind cheese, which has been bandaged to hold back the mould growth. Although it has a Cheddar style it was supposed to be based on a Fontina recipe with a smoother, chewier texture. Ultimately it falls between the two, and is a delightful ‘snacking’ cheese with its nutty and buttery flavours.
