This semi-hard, pressed cheese weighing 4 kg (9 lb) has a smooth texture with scattered eyelets due to the addition of the local microbrew made with Cascade hops. The waxed outside rind holds the flavours intact; the ripening and daily rub help develop the hoppy yet sweet flavours.
