Kunik is a triple-cream using both goat’s milk and Jersey cow’s milk cream to give a richness but also a tangy flavour. The soft downy rind has the merest whiff of mushroom, and the 250–275 g (9–10 oz) cheese is a perfect foil to sparkling wines or a dry cider or perry.
Three Sisters are small 115 g (4 oz) cheeses made with cow’s, goat’s and ewe’s milk with a thin bloomy rind; the earthy, nutty taste has a definite tang at the finish. I would pair this with a fruity dry wine.
