Molds are the result of fungi growing on foods. Beneficial edible molds are key to the successful production of certain cheeses. Spores are introduced to the surface or the interior of cheeses such as Roquefort or Camembert, adding flavor and texture. Surface molds ripen inward; internal molds ripen throughout the paste.
