An extract that causes milk to coagulate or curds to separate from whey. Rennet comes from the stomachs of calves, sheep, or goats. (One legend claims that cheese was invented by an Arab who tried to carry milk across a desert in a container made from an animal’s stomach, only to discover that the milk became an edible solid.) Nowadays, plant-based rennet is also used.
