The King of Cheeses, Brie has been enjoyed for centuries in its native Île-de-France. Mass-produced Brie is a bland, disappointing echo of the real thing, which is made from unpasteurized milk and is aged for less than sixty days, making it unavailable in the United States. Ripe Brie has a smooth, not-quite-runny texture, a dry, cracked white rind, and a mushroomy flavor. An overripe wheel reeks of ammonia.
