A ball of fresh mozzarella stuffed with a luscious blend of unfinished mozzarella curd and cream, burrata is sweet and earthy, with just a hint of sourness. It was first crafted in Puglia in the 1920s. Today, lesser versions are made in and outside Italy from cow’s milk.
