Brie’s kissing cousin, Camembert hails from Normandy and features a similar powdery white rind, rich and creamy interior, and meaty, wild mushroom flavor. Some reddish brown on the white rind is a good sign; a pure white, velvety rind means the cheese is not yet fully ripe. A strong ammonia odor signals it is overripe.
