A handcrafted, well-aged Cheddar is one of the world’s great cheeses: a firm yet yielding texture, a fresh aroma, and a nutty, savory, sweet yet tart flavor with a lingering finish. Cheddars from the British Isles (exported by Neal’s Yard Dairy) and artisanal Cheddars from Vermont or California are generally first-rate.
