Much-imitated, this crottin is one of the classic and most famous goat cheeses of the Loire Valley. Formed into small disks, Crottin de Chavignol has a nutty, rich flavor and is eaten at various stages of maturation. When young, it is white, soft, solid, mildly tangy, and has a thin rind. Aged cheeses have a yellow, crumbly, sharply flavored interior and a dark, thick rind.
