One of the best-known washed-rind cheeses, Époisses was born among the vineyards of Burgundy. Its telltale orange rind is created by washing the cheese with marc (French grappa), resulting in a strong barnyardy odor. A smooth, savory, meaty interior tastes somewhat milder than the cheese smells.
