This stretched-curd, mildly salty, white cheese is noted for its ability to hold its shape when fried or even grilled, making it a popular ingredient in eastern Mediterranean cooking. Some halloumi is allowed to age until it is quite hard. Mass-produced halloumi contains cow’s milk.
