  • About
semifirm, hard | sheep’s milk | Spain
One of Spain’s prized sheep’s milk cheeses, Idiazábal has a firm, pale interior and a hard, inedible rind. Buttery and nutty in flavor, it is also sometimes smoked. Longer aging yields a hard cheese ideal for grating.
