When traditionally made by combining curds from different days, a stippled texture and particularly complex flavor is the result. Sold young and moist with a mild chive tang, or aged with a more intense onion flavor. Artisanal products, like Mrs Kirkham’s Lancashire, have a crumbly texture and robust taste. Mass-produced Lancashire is creamier and blander.
