Lincolnshire Poacher

Invented by cheese makers Simon and Tim Jones in 1992, this nutty, slightly fruity, mildly sweet cheese is a recent addition to the English tradition of pressed cheeses made from raw cow’s milk. The cylinders have a slate gray rind and pale interior.
