This lightly pockmarked cheese, made in Friuli–Venezia Giulia, is sold at various stages of maturation, including fresco (lightly aged), mezzano (semi-aged), or stagionato (aged). As it ages, its color shifts from ivory to lightly golden to straw colored, its flavor deepens, and its texture changes from springy to brittle.
