Monte Enebro

A goat’s milk cheese from La Mancha, Monte Enebro is a large, flattened log with white and gray molds covering its rind. Dense and creamy with a hint of juniper (enebro), it has a full-bodied flavor that becomes saltier and more pungent with age.
