One of Normandy’s great cheeses, Neufchâtel has an edible bloomy rind, a rich, creamy, salty flavor, and a grainy texture. It is molded in a variety of shapes, though a heart is the classic form. (Do not confuse this French cheese with the U.S. cheese of the same name, which is a reduced-fat cream cheese.)
